1 medium-sized eggplant

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for heat)

1 teaspoon salt

Freshly ground black pepper to taste

¼ cup grated Parmesan cheese (optional, for extra flavor)

Instructions
 

Prepare the Eggplant: Slice the eggplant into thin rounds, about ¼-inch thick. If you prefer extra crispy chips, consider slicing them even thinner.

    Pre-Salting (Optional): To reduce bitterness and extra moisture, sprinkle the slices with salt and let them sit for about 20-30 minutes. Rinse and pat dry with paper towels.

      Season the Eggplant: In a large mixing bowl, toss the eggplant slices with olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper. Make sure the slices are well-coated.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

          Arrange the Chips: Place a single layer of the seasoned eggplant slices in the air fryer basket. Avoid overcrowding to ensure even cooking. If you have many slices, do this in batches.

            Air Fry the Chips: Cook the eggplant chips in the air fryer for 12-15 minutes, shaking the basket halfway through for even crispiness. Keep an eye on them, as cooking times may vary based on the thickness of the slices and the model of your air fryer.

              Add Parmesan (Optional): If you’re using Parmesan cheese, sprinkle it on the chips during the last 3 minutes of cooking to let it melt and form a delicious cheesy crust.
