Crispy Air Fryer Taco-Stuffed Mini Peppers

12 mini sweet peppers, halved and seeds removed

1 cup ground beef (or turkey for a lighter option)

1 tablespoon taco seasoning (store-bought or homemade)

1/2 cup black beans, drained and rinsed

1/2 cup corn (canned, frozen, or fresh)

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup diced tomatoes (fresh or canned)

1/4 cup finely chopped red onion

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: sour cream, avocado, sliced jalapeños, cilantro

Instructions
 

Prepare the Filling:

    In a skillet over medium heat, add the ground beef (or turkey). Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

      Season the Meat:

        Stir in taco seasoning, black beans, corn, tomatoes, and red onion. Cook for an additional 2-3 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

          Stuff the Peppers:

            Preheat the air fryer to 350°F (175°C). While heating, take the halved mini sweet peppers and lightly brush or spray the insides with olive oil.

              Fill the Peppers:

                Spoon the taco meat mixture generously into each mini pepper half. Top each stuffed pepper with shredded cheese.

                  Air Fry the Peppers:

                    Place the stuffed mini peppers in the air fryer basket in a single layer. Cook for about 10-12 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                      Serve:
