Crispy Baked Apple Cider Donuts

1 ½ cups apple cider

1 cup all-purpose flour

½ cup whole wheat flour

½ cup granulated sugar

½ cup brown sugar, packed

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

2 large eggs

½ cup unsweetened applesauce

¼ cup vegetable oil

1 teaspoon vanilla extract

½ cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions
 

Reduce the Cider: In a medium saucepan, bring the apple cider to a boil over medium heat. Reduce the heat and let it simmer for about 15-20 minutes, or until it reduces to about ½ cup. Set it aside to cool slightly.

    Preheat the Oven: While the cider is reducing, preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or butter.

      Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Mix Wet Ingredients: In another bowl, whisk together the eggs, reduced apple cider, applesauce, vegetable oil, and vanilla extract until smooth.

          Combine Wet and Dry Mixtures: Gently fold the wet mixture into the dry ingredients until just combined. Be careful not to overmix; the batter should be thick but smooth.

            Fill the Donut Pan: Transfer the batter to a piping bag (or a resealable plastic bag with a corner snipped off) and pipe the batter into the prepared donut pan, filling each mold about ¾ full.

              Bake the Donuts: Bake in the preheated oven for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

                Coat the Donuts: While the donuts are baking, mix the ½ cup granulated sugar and 1 tablespoon ground cinnamon in a shallow bowl. Once the donuts are done, let them cool for about 5 minutes in the pan before transferring them to a wire rack. While still warm, coat each donut in the cinnamon sugar mixture.
