1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1 cup unsweetened almond milk (or any plant-based milk)

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup BBQ sauce (your favorite brand or homemade)

8 small corn or flour tortillas

1 avocado, sliced

1 cup red cabbage, finely shredded

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

      Prepare the Cauliflower:

        In a large bowl, whisk together the flour, garlic powder, smoked paprika, salt, and black pepper. Gradually add the almond milk, whisking until you have a smooth batter.

          Coat the Cauliflower:

            Dip each cauliflower floret into the batter, letting the excess drip off, then roll it in the panko breadcrumbs until fully coated. Place the coated florets on the prepared baking sheet.

              Bake the Cauliflower:
