1 cup panko breadcrumbs

2 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 tsp cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 cup buttermilk (or dairy-free alternative)

1 cup buffalo sauce (plus extra for serving)

8 small corn tortillas

1 cup shredded lettuce

1 ripe avocado, sliced

½ cup diced tomatoes

½ cup ranch dressing (store-bought or homemade)

Fresh cilantro, for garnish

Prepare the Cauliflower: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper. In a large bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.
