Crispy Buffalo Tofu Nuggets

1 block (14 oz) firm tofu, pressed and drained

1 cup all-purpose flour

1 cup unsweetened plant milk (e.g., almond or soy)

1 cup gluten-free breadcrumbs (or regular breadcrumbs)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Fresh celery sticks and vegan ranch (for serving)

Instructions
 

Prepare the Tofu: Preheat your oven to 425°F (220°C). Cut the pressed tofu into bite-sized cubes or nuggets.

    Setup Dredging Stations: In three separate bowls, place the flour mixed with garlic powder, onion powder, smoked paprika, salt, and pepper in one bowl, the plant milk in another bowl, and the breadcrumbs in the last bowl.

      Coat the Tofu: Take each tofu piece and coat it in the seasoned flour, then dip it in the plant milk, and finally roll it in the breadcrumbs. Place the coated tofu nuggets on a baking sheet lined with parchment paper.

        Bake the Nuggets: Drizzle the olive oil over the nuggets and bake in the preheated oven for 25-30 minutes or until golden brown and crispy, flipping them halfway through for even cooking.

          Buffalo Sauce Coating: In a large mixing bowl, pour the buffalo sauce. Once the tofu nuggets are done baking, toss them in the bowl with the buffalo sauce until fully coated.

            Final Bake: Place the coated nuggets back on the baking sheet and bake for an additional 5-10 minutes to set the sauce.
