Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 cup unsweetened almond milk (or regular milk)

1 cup breadcrumbs (panko for extra crispiness)

1 cup buffalo sauce (adjust to taste)

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Celery sticks, for serving (optional)

Blue cheese or ranch dressing, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.

Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with olive oil until well-coated. Set aside.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper until combined.

Create the Batter: Slowly add the almond milk (or regular milk) to the flour mixture, whisking until a smooth batter forms.

Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Then roll it in breadcrumbs until fully coated, placing the coated florets on the prepared baking sheet.

Bake: Bake the cauliflower wings in the preheated oven for 25-30 minutes, turning halfway through, until they are golden and crispy.

Toss with Buffalo Sauce: Once baked, remove the cauliflower wings from the oven and transfer them to a large bowl. Pour the buffalo sauce over the hot wings and gently toss to coat thoroughly.

Final Bake (optional): For extra crispiness, return the coated cauliflower wings to the oven for an additional 5-10 minutes.

Serve: Remove from the oven and garnish with fresh parsley if desired. Serve hot with celery sticks and your choice of blue cheese or ranch dressing for dipping.
