Ingredients

2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup green onions, finely chopped

2 large eggs, beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Vegetable oil for frying

Instructions

Prepare the Zucchini: In a large bowl, grate the zucchinis and sprinkle with salt. Let them sit for about 10-15 minutes. This process will help draw out excess moisture from the zucchinis.

Squeeze out Excess Moisture: After resting, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini. Ensure it's well-dried to get crispy fritters.

Mix Ingredients: In another bowl, combine the flour, mozzarella cheese, Parmesan cheese, green onions, beaten eggs, garlic powder, onion powder, black pepper, and red pepper flakes. Mix well until combined.

Combine with Zucchini: Add the drained zucchini to the cheese mixture and stir until all the ingredients are evenly incorporated.

Heat Oil: In a large skillet, pour in enough vegetable oil to cover the bottom, about 1/4 inch deep. Heat the oil over medium heat until shimmering.

Fry Fritters: Using a spoon or a cookie scoop, drop spoonfuls of the zucchini mixture into the hot oil. Flatten them slightly with the back of a spatula. Fry them in batches, being careful not to overcrowd the pan.

Cook Until Golden: Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat as necessary to prevent burning.

Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.

Serve: Serve warm, garnished with extra green onions or a dollop of sour cream or yogurt for dipping.
