Crispy Feta Zucchini Fritters

2 medium zucchinis, grated

1 teaspoon salt

1 cup crumbled feta cheese

1/2 cup all-purpose flour (or gluten-free flour)

2 large eggs

1/4 cup finely chopped fresh dill (or parsley)

2 cloves garlic, minced

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

Olive oil, for pan-frying

Lemon wedges, for serving

Instructions
 

Prepare the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and sprinkle with salt. Let it sit for about 10-15 minutes to draw out excess moisture.

    Squeeze Out Moisture: After the drying time, gather the towel with zucchini and twist it to squeeze out as much liquid as possible. The drier the zucchini, the crispier the fritters will turn out!

      Mix Ingredients: In a mixing bowl, combine the drained zucchini, crumbled feta cheese, flour, eggs, chopped dill, minced garlic, black pepper, and crushed red pepper flakes (if using). Stir until everything is well combined; the mixture should be thick and hold together.

        Heat the Oil: In a large skillet, heat about 2 tablespoons of olive oil over medium heat. You want enough oil to coat the bottom of the pan for frying.

          Form Fritters: Using your hands or a spoon, scoop out about 2 tablespoons of the mixture and shape it into a patty. Repeat with the remaining mixture, ensuring to leave some space between each fritter in the skillet.

            Fry the Fritters: Add the shaped fritters into the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side or until golden brown and crispy. Adjust the heat as needed to prevent burning.

              Drain and Serve: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Serve warm with lemon wedges for squeezing on top.
