Ingredients

4 medium-sized russet potatoes

4 tablespoons olive oil

6 cloves garlic, minced

2 teaspoons dried Italian herbs (oregano, basil, thyme)

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Grated Parmesan cheese for topping

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Cut each potato into wedges (approximately 8 wedges per potato) by first halving the potato lengthwise, then cutting each half into 4–5 wedges.

Season the Potatoes: In a large mixing bowl, combine the olive oil, minced garlic, dried Italian herbs, smoked paprika, salt, and black pepper. Add the potato wedges to the bowl and toss until they are evenly coated with the herb mixture.

Arrange on Baking Sheet: Spread the seasoned potato wedges in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure crispiness.

Bake Until Crisp: Bake in the preheated oven for 30-35 minutes, turning the wedges halfway through for even cooking. They should be golden brown and crispy on the outside when done.

Garnish and Serve: Remove the potato wedges from the oven and allow them to cool for a few minutes. If desired, sprinkle with grated Parmesan cheese and fresh parsley for added flavor. Serve hot with your favorite dipping sauce (like garlic aioli or ranch).
