250g halloumi cheese, sliced into strips

1 tbsp olive oil

1 tsp smoked paprika

¼ tsp garlic powder

¼ tsp cayenne pepper (optional, for heat)

Salt and pepper, to taste

8 large romaine or butter lettuce leaves

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

½ cup corn kernels (fresh, canned, or frozen)

½ red onion, finely chopped

Fresh cilantro, for garnish

Lime wedges, for serving

½ cup salsa or pico de gallo, for topping

Instructions
 

Preheat the Oven: Preheat your oven to 200°F (95°C) to keep the crispy halloumi warm while preparing the wraps.

    Prepare the Halloumi: In a bowl, combine the olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper. Toss the halloumi strips in this mixture until well-coated.

      Cook the Halloumi: Heat a non-stick skillet over medium-high heat. Once hot, add the halloumi strips and cook for about 2-3 minutes on each side, or until golden brown and crispy. Remove from the heat and transfer to the preheated oven to keep warm.

        Assemble the Wraps: Take a lettuce leaf and layer it with a few slices of avocado, a spoonful of corn, cherry tomatoes, and chopped red onion. Place 2-3 pieces of crispy halloumi on top.
