4 large flour tortillas

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 cup roasted Hatch green chiles, diced

1/2 cup cooked black beans, rinsed and drained

1/4 cup chopped fresh cilantro

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons vegetable oil (for frying)

Sour cream, for serving

Salsa, for serving

Lime wedges, for garnish

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded Monterey Jack cheese, shredded cheddar cheese, diced roasted Hatch chiles, black beans, chopped cilantro, ground cumin, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.

    Assemble the Quesadillas: Place one flour tortilla on a clean surface. Spread a generous portion of the cheese and Hatch chili filling on one half of the tortilla, leaving some space around the edges. Fold the other half of the tortilla over the filling to create a half-moon shape. Press down gently to flatten slightly. Repeat this process with the remaining tortillas and filling.

      Heat the Oil: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Once hot, place one quesadilla in the skillet. Cook for about 3-4 minutes or until the bottom is golden brown and crispy. Carefully flip the quesadilla using a spatula, adding another tablespoon of oil if needed, and cook for an additional 3-4 minutes on the other side until golden and crispy.

        Repeat: Remove the cooked quesadilla from the skillet and place it on a paper towel-lined plate to absorb excess oil. Repeat the process with the remaining quesadillas.

          Slice and Serve: Once all the quesadillas are cooked, slice them into wedges. Serve hot with sour cream, salsa, and lime wedges for garnish. Enjoy the crispy, cheesy goodness!
