1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

½ cup all-purpose flour

½ cup cornstarch

1 tsp baking powder

½ tsp salt

½ tsp black pepper

1 large egg, beaten

1 cup panko breadcrumbs

Vegetable oil, for frying

For the Honey Garlic Sauce:

½ cup honey

4 cloves garlic, minced

2 tbsp soy sauce

1 tbsp apple cider vinegar

1 tsp sesame oil

1 tsp crushed red pepper flakes (optional, for heat)

Chopped green onions and sesame seeds for garnish

Prepare the Chicken: In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Toss the chicken pieces in the flour mixture until evenly coated.

    Batter the Chicken: Dip each floured chicken piece into the beaten egg, allowing any excess egg to drip off. Then, roll each piece in the panko breadcrumbs until fully coated.

      Heat the Oil: In a large skillet or deep frying pan, heat about 1 inch of vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a few breadcrumbs in; they should sizzle and turn golden brown.

        Fry the Chicken Bites: Carefully add the coated chicken to the hot oil in batches, making sure not to overcrowd the pan.
