Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

2 large eggs

1/4 cup buttermilk

Vegetable oil, for frying

1/2 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tsp ginger, minced

1 tsp sesame oil (optional)

1 tbsp rice vinegar (optional)

Chopped green onions and sesame seeds for garnish

Instructions

Prepare the Chicken: In a large bowl, combine the flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. In a separate bowl, whisk together the eggs and buttermilk.

Coat the Chicken: Dip each piece of chicken in the egg mixture, allowing any excess to drip off, then transfer it to the flour mixture. Toss well to coat, pressing lightly to adhere the coating. Place the coated pieces on a baking sheet and let them rest for about 10 minutes.

Make the Sauce: In a medium saucepan over medium heat, combine the honey, soy sauce, minced garlic, minced ginger, sesame oil, and rice vinegar. Stir well and bring to a simmer. Let it cook for 5-7 minutes until it thickens slightly. Remove from heat and set aside.

Fry the Chicken: In a large, deep frying pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the chicken bites in batches, ensuring not to overcrowd the pan. Cook for about 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to remove the chicken and drain on paper towels.

Combine Chicken and Sauce: In a large mixing bowl, toss the crispy chicken bites with the honey garlic sauce until evenly coated.

Serve: Plate the chicken bites and garnish with chopped green onions and sesame seeds for an extra touch. Enjoy them warm with your favorite dipping sauce!
