1 cup fresh jalapeños, seeds removed and finely chopped

1 cup sharp cheddar cheese, shredded

½ cup cream cheese, softened

½ cup all-purpose flour

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (Panko for extra crunch)

Vegetable oil for frying

Prepare the Jalapeños: Start by chopping the fresh jalapeños finely, ensuring that seeds are removed for a milder flavor. Set aside.

    Mix the Cheese Filling: In a large mixing bowl, combine the chopped jalapeños, shredded cheddar cheese, and softened cream cheese. Mix thoroughly until well combined. Season with garlic powder, onion powder, smoked paprika, salt, and pepper and mix again.

      Form the Bites: Using your hands, take about a tablespoon of the jalapeño cheese mixture and form small bites (around 1-inch balls). Place them on a baking sheet lined with parchment paper. Repeat until all mixture is used.

        Prepare the Breading Station: In one bowl, add the flour. In a second bowl, beat the egg. In a third bowl, add the breadcrumbs.

          Bread the Jalapeño Bites: Roll each cheese ball first in the flour, then dip in the egg wash, and finally roll in the breadcrumbs until fully coated. Set them aside on the baking sheet.

            Fry the Bites: In a large skillet, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). Carefully add the jalapeño cheddar bites in batches, avoiding overcrowding the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.

              Drain and Cool: Remove the bites from the oil and transfer them to a plate lined with paper towels to absorb excess oil.
