Crispy Parmesan Cauliflower Bites

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Cooking spray or olive oil for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil and a bit of salt to coat them evenly.

      Make the Breading Station: In three separate shallow bowls, set up your breading station.

        - In the first bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.

          - In the second bowl, whisk the eggs until well beaten.

            - In the third bowl, combine the breadcrumbs and grated Parmesan cheese.

              Coat the Cauliflower: Dip each cauliflower floret first into the flour mixture, coating it completely. Shake off any excess flour. Next, dip it into the beaten eggs, ensuring it's fully covered. Finally, roll it in the breadcrumb and Parmesan mixture, pressing gently to adhere the crumbs.

                Arrange on Baking Sheet: Place the breaded cauliflower bites on the prepared baking sheet in a single layer, leaving space between each piece to allow for even cooking.

                  Bake: Lightly spray the tops of the cauliflower bites with cooking spray or drizzle with olive oil. Bake in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy. Make sure to flip them halfway through for even browning.

                    Garnish and Serve: Once done, remove the cauliflower bites from the oven and let them cool for a couple of minutes. Toss with fresh chopped parsley for color and serve warm.
