Ingredients

4 medium-sized russet potatoes

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

¼ cup fresh parsley, chopped (for garnish)

¼ cup olive oil (for drizzling)

Cooking spray (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Slice them into ¼ inch thick rounds for even cooking.

Make the Coating Mixture: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure an even distribution of seasonings.

Coat the Potato Rounds: Place the potato rounds in a large bowl. Drizzle the olive oil over the potatoes and toss until well-coated. This helps the coating adhere and provides crispiness.

Coat with Cheese Mixture: Take each potato round and dip both sides into the Parmesan-breadcrumb mixture, pressing lightly to ensure it adheres well. Place the coated rounds on the prepared baking sheet.

Spray for Extra Crispiness: If desired, lightly spray the potato rounds with cooking spray for an added layer of crispiness.

Bake: Bake in the preheated oven for about 25-30 minutes, flipping the rounds halfway through, until they are golden brown and crispy.

Serve and Garnish: Once baked, remove the potato rounds from the oven and let them cool for a few minutes. Garnish with fresh chopped parsley for a pop of color and flavor. Serve warm with your favorite dipping sauce, such as marinara or spicy aioli.
