4 large russet potatoes

1 cup shredded Pepper Jack cheese

1/2 cup cream cheese, softened

2 cloves garlic, minced

1/4 cup green onions, finely chopped

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup all-purpose flour

2 large eggs, beaten

2 cups panko breadcrumbs

Cook the Potatoes: Begin by peeling the russet potatoes and boiling them in a large pot of salted water until fork-tender (about 15-20 minutes). Drain and let them cool for a few minutes.

    Mash the Potatoes: In a large mixing bowl, mash the cooled potatoes until smooth. Ensure there are no lumps for a creamy texture.

      Prepare the Filling: In a separate bowl, combine the shredded Pepper Jack cheese, softened cream cheese, minced garlic, chopped green onions, smoked paprika, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

        Fill the Potato Bombs: Take a scoop of mashed potatoes (about the size of a golf ball) and flatten it in your palm. Add a tablespoon of the cheese filling in the center, then fold the mashed potatoes over it, sealing the edges to form a ball. Repeat with the remaining potatoes and filling.

          Prepare for Frying: Set up a breading station with three bowls: one with flour, one with the beaten eggs, and one with panko breadcrumbs. Roll each potato bomb in flour, then dip it in the beaten eggs, and finally coat it with panko breadcrumbs, pressing gently to adhere.
