Crispy Ranch Chicken Tenders

1 lb chicken tenderloins

1 cup buttermilk

1 packet (1 oz) ranch seasoning mix

1 cup all-purpose flour

1 cup panko bread crumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp black pepper

½ tsp salt

Marinate the Chicken: In a medium bowl, combine the buttermilk and half of the ranch seasoning mix. Add the chicken tenderloins, ensuring they are thoroughly coated. Cover and refrigerate for at least 1 hour (or up to 8 hours for maximum flavor).

    Prepare the Breading Station: In a shallow dish, combine the flour, remaining ranch seasoning mix, garlic powder, onion powder, paprika, black pepper, and salt. In another shallow dish, place the panko bread crumbs.

      Coat the Chicken: Remove the chicken from the buttermilk marinade, letting excess liquid drip off. Dredge each piece first in the flour mixture, shaking off any excess, then dip back into the buttermilk, and finally coat thoroughly with panko bread crumbs.

        Preheat the Oven (if baking): Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top (this helps keep the tenders crispy), or prepare a skillet with enough oil for frying (about ½ inch deep).

          Cook the Chicken:

            - If Baking: Place the coated chicken tenders on the wire rack. Lightly spray the tops with cooking spray for extra crispiness. Bake for 20-25 minutes, turning once, until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

              - If Frying: Heat the oil in a large skillet over medium-high heat. Carefully add the chicken tenders in batches to avoid overcrowding. Fry for about 4-5 minutes on each side, until they are golden brown and cooked through. Drain on paper towels.

                Serve: Let the chicken tenders cool for a couple of minutes before serving. They can be enjoyed plain, or with your favorite dipping sauce such as ranch dressing, BBQ sauce, or honey mustard.
