The cooking time for your Spicy Sweet Crockpot Chili Chicken is essential in determining the final texture and flavor absorption of the chicken. Slow cooking allows the chicken to break down, resulting in tender, juicy meat that easily shreds. As the chicken simmers in the sauce, it absorbs all the rich, spicy, and sweet flavors, enhancing its overall taste. Cooking for the recommended 6-8 hours on low or 4-5 hours on high ensures that the chicken not only cooks through but also infuses those delightful chili flavors deep into the meat. This extended cooking time is the secret to achieving that melt-in-your-mouth texture that makes these sliders so irresistible.

Ingredients

2 lbs boneless, skinless chicken thighs

1 cup chili sauce

1/2 cup honey

1 tablespoon apple cider vinegar

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust to taste)

8 slider buns

1 cup shredded coleslaw mix

Fresh cilantro, for garnish

Slices of jalapeño (optional, for garnish)

Instructions

Prepare the Chicken: Place the chicken thighs into the crockpot. Ensure they are laid flat for even cooking.

Mix the Sauce: In a medium bowl, combine the chili sauce, honey, apple cider vinegar, Worcestershire sauce, soy sauce, garlic powder, onion powder, smoked paprika, cumin, black pepper, and cayenne pepper. Stir well until fully mixed.

Coat the Chicken: Pour the sauce mixture over the chicken in the crockpot. Use tongs or a spoon to make sure the chicken is well coated.

Cook Low and Slow: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and can be easily shredded with a fork.

Shred the Chicken: Once done, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot, mixing it with the sauce to absorb more flavor.

Assemble the Sliders: Toast the slider buns lightly under a broiler if desired. Place a generous amount of the chili chicken on the bottom half of each slider bun. Top with a spoonful of coleslaw mix and add the top half of the bun.

Garnish: If you’d like, garnish with fresh cilantro and slices of jalapeño for an extra kick!

Serve: Arrange the sliders on a platter and serve warm with extra sauce on the side for dipping.
