Ingredients

1 lb ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 can (14 oz) diced tomatoes with green chilies

1 cup sweet chili sauce (store-bought or homemade)

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado, sliced (for serving)

Cooked rice or quinoa (for serving)

Instructions

Prep the Ingredients: In a large mixing bowl, combine the drained black beans, kidney beans, corn, diced tomatoes with green chilies, sweet chili sauce, chopped onion, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to incorporate all the flavors.

Cook the Turkey: In a skillet over medium heat, add the ground turkey. Break it up with a spatula as it cooks, until fully browned (about 5-7 minutes). Drain any excess fat if necessary.

Combine in the Crockpot: Transfer the browned turkey into the crockpot. Pour the bean and vegetable mixture over the turkey. Stir gently to combine everything evenly.

Slow Cook: Cover the crockpot with a lid and set it to cook on low for 4-6 hours, or on high for 2-3 hours. Stir occasionally if possible to help blend the flavors.

Serve: Once cooked, taste and adjust seasoning if necessary. Serve the sweet chili turkey mixture over bowls of rice or quinoa. Top with fresh cilantro and avocado slices for added creaminess and flavor.

Enjoy: Dig into your delicious Sweet & Spicy Crockpot Turkey Bowls and enjoy the burst of flavors!
