1 medium head of cauliflower, cut into bite-sized florets

1 cup buttermilk (or dairy-free alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup all-purpose flour (or gluten-free flour)

1 cup breadcrumbs (panko for extra crunch is recommended)

1/2 teaspoon cayenne pepper (optional, for heat)

Olive oil spray or cooking oil spray

Instructions
 

Prepare the Cauliflower: Start by washing the cauliflower and cutting it into small bite-sized florets. Make sure they are relatively uniform in size for even cooking.

    Marinate: In a large bowl, mix the buttermilk, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper if using. Add the cauliflower florets to the bowl, ensuring they are well coated. Cover and marinate in the fridge for at least 30 minutes (up to 2 hours for better flavor).

      Set Up Breading Station: While the cauliflower is marinating, prepare a breading station. In one shallow bowl, place the flour. In a second bowl, add the breadcrumbs. For added crunch, consider mixing in some grated Parmesan cheese into the breadcrumbs if desired.

        Coat the Florets: After marinating, take each cauliflower floret, allowing any excess buttermilk to drip off, then dip it into the flour, coating it evenly.
