4 cups green cabbage, finely shredded

2 cups purple cabbage, finely shredded

1 cup carrots, julienned

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed and halved

1/2 cup green onions, sliced

1/2 cup fresh cilantro, chopped

1/2 cup roasted peanuts, roughly chopped

For the Dressing:

1/4 cup rice vinegar

1/4 cup soy sauce

2 tablespoons sesame oil

2 tablespoons honey or maple syrup

1 tablespoon fresh ginger, grated

1 teaspoon garlic, minced

1 teaspoon chili flakes (adjust to taste)

Salt and pepper to taste

Prepare the Veggies: In a large mixing bowl, combine the green and purple cabbages, carrots, red bell pepper, snap peas, green onions, and cilantro. Toss them together to mix well.

    Make the Dressing: In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or maple syrup, grated ginger, minced garlic, chili flakes, salt, and pepper until well combined.

      Combine: Pour the dressing over the shredded vegetable mixture. Toss everything together until the vegetables are well coated with the dressing.
