For the Cauliflower:

1 medium head of cauliflower, cut into small florets

1 cup breadcrumbs (panko for extra crunch)

1/2 cup all-purpose flour (or a gluten-free alternative)

1 cup buttermilk (or non-dairy milk with 1 tbsp vinegar)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional, for a kick)

Salt and pepper to taste

For the BBQ Sauce:

1/2 cup BBQ sauce (store-bought or homemade)

1 tbsp honey or maple syrup (for vegan option)

For the Wraps:

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 medium cucumber, thinly sliced

1 avocado, sliced

Fresh cilantro or parsley for garnish

Lime wedges for serving

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Breading Station: In a mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. In another bowl, pour the buttermilk.

      Coat the Cauliflower: Dip each cauliflower floret first into the buttermilk, allowing any excess to drip off. Then coat with the breadcrumb mixture, pressing gently to ensure it adheres well. Place the coated florets on the prepared baking sheet.

        Bake the Cauliflower: Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy. You may want to flip them halfway through for even cooking.
