Crunchy Buffalo Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1/2 cup buffalo sauce (more or less based on spice preference)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup crumbled blue cheese (optional)

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup diced red onion

4 large whole grain or spinach tortillas

1/2 cup ranch or vegan dressing for drizzling

Instructions
 

Preparation of Chickpeas: Preheat your oven to 400°F (200°C). On a baking sheet lined with parchment paper, spread the drained and rinsed chickpeas. Drizzle with olive oil, sprinkle garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.

    Roasting Chickpeas: Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the chickpeas are golden brown and crunchy.

      Buffalo Sauce Coating: Remove the chickpeas from the oven and let them cool for about 5 minutes. In a bowl, combine the roasted chickpeas and buffalo sauce, tossing gently until they are well coated.

        Assembling the Wraps: Lay out your tortillas on a clean surface. Start by placing a generous amount of shredded lettuce on each tortilla, followed by some diced tomatoes, red onion, and a portion of the buffalo chickpeas.

          Adding Cheese & Dressing: If using, sprinkle crumbled blue cheese on top of the filling. Drizzle with ranch dressing for extra creaminess.

            Wrapping it Up: Fold the sides of the tortilla inward and roll from the bottom up, tightly encasing the filling. Secure with a toothpick if necessary to hold the wrap together.
