Ingredients

1 lb large shrimp, peeled and deveined

1/2 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

1 large egg

1 cup shredded coconut (sweetened or unsweetened, based on preference)

1/2 cup panko breadcrumbs

1 teaspoon lime zest

Cooking oil (for frying)

Instructions

Preparation: Begin by patting the shrimp dry with paper towels. This step ensures that the batter adheres well to the shrimp.

Seasoning the Flour: In a shallow bowl, combine the all-purpose flour, garlic powder, paprika, salt, and pepper. Mix well to ensure even distribution of the seasonings.

Egg Mixture: In another bowl, whisk the egg until well beaten. This will be used to help the coating stick to the shrimp.

Coconut Coating: In a third bowl, mix together the shredded coconut, panko breadcrumbs, and lime zest. The combination of textures will create a delightful crunch!

Breading the Shrimp: Working in batches, take each shrimp and first dip it into the flour mixture to lightly coat, shaking off any excess. Next, dip it into the egg mixture, allowing any excess egg to drip off. Finally, coat the shrimp with the coconut and panko mixture, pressing lightly to ensure it adheres well. Repeat with remaining shrimp.

Heat the Oil: In a large skillet, heat about 1/2 inch of cooking oil over medium-high heat. To test if the oil is hot enough, drop a small piece of the coconut mixture in; if it sizzles, the oil is ready.

Fry the Shrimp: Carefully add the breaded shrimp to the hot oil in a single layer, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until the coating is golden brown and crispy. Use tongs to turn them gently.

Drain: Once cooked, transfer the shrimp bites to a plate lined with paper towels to drain any excess oil.

Serve: Serve the crunchy coconut shrimp bites warm, with a side of sweet chili sauce or your favorite dipping sauce for an extra touch of flavor. Garnish with fresh lime wedges for a zesty finish!
