Crunchy Maple Pecan Clusters

2 cups pecan halves

1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/3 cup maple syrup

1/4 cup almond butter (or any nut butter of your choice)

1/4 teaspoon sea salt

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

1/4 cup mini chocolate chips (optional, for extra sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the pecan halves, rolled oats, shredded coconut, and cinnamon (if using). Stir well to mix the dry ingredients evenly.

      Prepare Wet Mixture: In a small saucepan, over low heat, combine the maple syrup, almond butter, and sea salt. Stir continuously until the mixture is smooth and well-blended. This should take about 2-3 minutes.

        Combine Mixtures: Pour the warm maple mixture over the dry ingredients. Add the vanilla extract and mix with a spatula until all the dry ingredients are coated with the sticky mixture. If you’re using chocolate chips, gently fold them in at this stage.

          Shape Clusters: Using your hands, scoop out portions of the mixture and form small clusters (about 1-2 tablespoons each). Place them spaced apart on the prepared baking sheet.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the clusters are golden brown. Be sure to watch them closely, as they can go from toasted to burnt quickly.

              Cool: Remove from the oven and allow the clusters to cool completely on the baking sheet. They will harden as they cool.
