Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

2 teaspoons ranch seasoning mix (store-bought or homemade)

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt, to taste

Freshly ground black pepper, to taste

Fresh parsley or dill, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Chickpeas: After rinsing the chickpeas, spread them on a clean kitchen towel and pat them dry. Removing moisture is key to achieving maximum crunch.

Mix the Seasoning: In a small bowl, combine the ranch seasoning mix, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to combine.

Coat the Chickpeas: In a large mixing bowl, toss the dried chickpeas with olive oil to coat evenly. Sprinkle the seasoning mixture over the chickpeas and toss again until all the chickpeas are well-coated with the spices.

Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Bake in the preheated oven for 30-35 minutes, stirring every 10 minutes to ensure even roasting. The chickpeas should be golden and crispy when done.

Cool and Serve: Once roasted, remove the chickpeas from the oven and let them cool for a few minutes. They will continue to crisp up as they cool. Garnish with fresh parsley or dill, if desired, and serve immediately as a snack or salad topping.

Storage: If you have leftovers (though they rarely last long!), store cooled chickpeas in an airtight container for up to a week.
