1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

1/4 teaspoon cayenne pepper (adjust to taste)

Salt, to taste

1 cup mixed nuts (almonds, cashews, walnuts)

1/2 cup dried cranberries or raisins

1/2 cup dark chocolate chips (optional)

1/2 teaspoon cinnamon (optional for added flavor)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the chickpeas: After rinsing the chickpeas thoroughly, spread them out on a clean kitchen towel or paper towels and pat them dry to remove excess moisture. Ensuring they are dry will help them become extra crunchy.

      Season the chickpeas: In a mixing bowl, combine the dried chickpeas with olive oil, smoked paprika, garlic powder, ground cumin, cayenne pepper, and salt. Toss until the chickpeas are evenly coated with the oil and spices.

        Roast the chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, shaking the sheet halfway through to ensure even cooking, until the chickpeas are golden brown and crispy.

          Make the trail mix: While the chickpeas are roasting, in a large mixing bowl, combine the mixed nuts, dried cranberries or raisins, and dark chocolate chips, if using. You can also sprinkle in the cinnamon for an extra touch of flavor.

            Combine: Once the chickpeas are roasted and out of the oven, allow them to cool for a few minutes before adding them to the mixing bowl with the nuts and dried fruit. Toss everything together until well combined.
