1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

5 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon sea salt

½ teaspoon black pepper

1 tablespoon nutritional yeast (optional, for a cheesy flavor)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: After rinsing the chickpeas, spread them out on a clean kitchen towel or paper towels. Pat them dry thoroughly, as removing moisture will help them become crunchier when roasted.

      Mix Seasonings: In a medium-sized bowl, mix together the olive oil, minced garlic, smoked paprika, cumin, sea salt, black pepper, and nutritional yeast (if using). Stir until it's well combined.

        Coat the Chickpeas: Add the dried chickpeas to the bowl and toss them in the oil and spice mixture until they are evenly coated.
