2 large cucumbers

8 oz (225g) cream cheese, softened

1/2 cup Greek yogurt

2 tablespoons fresh dill, chopped

2 tablespoons fresh chives, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon lemon juice

1 clove garlic, minced

Salt and pepper, to taste

Cherry tomatoes, halved (for garnish)

Instructions
 

Prepare the Cucumbers: Wash and dry the cucumbers. Slice them into 1-inch thick rounds, discarding the ends. Using a melon baller or small spoon, scoop out a portion of the center of each cucumber slice to create a small cup, being careful not to go all the way through.

    Make the Herb Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, Greek yogurt, chopped dill, chives, parsley, lemon juice, and minced garlic. Mix until well combined and creamy. Season with salt and pepper to taste.

      Fill the Cucumber Cups: Using a small spoon or piping bag, fill each cucumber slice generously with the herb cream cheese mixture.

        Garnish: Top each filled cucumber cup with a half cherry tomato for a pop of color and flavor.
