1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon sea salt

1 1/2 cups dark chocolate chips (preferably 60-70% cocoa)

1 cup granulated sugar

6 tablespoons unsalted butter, diced

1/2 cup heavy cream

1 teaspoon sea salt (plus more for sprinkling)

Instructions
 

Prepare the Caramel:

    - In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns into a dark amber liquid (about 10–15 minutes).

      - Once melted, carefully add the diced butter and stir until melted.

        - Gradually whisk in the heavy cream until smooth. Remove from heat and mix in 1 teaspoon of sea salt. Allow the caramel to cool for about 20 minutes until it thickens slightly.

          Make the Cookie Dough:

            - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

              - In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).

                - Beat in the eggs one at a time, followed by the vanilla extract.

                  - In a separate bowl, whisk together the flour, cocoa powder, baking soda, and sea salt. Gradually add the dry ingredients to the wet ingredients until just combined.
