Ingredients

1 1/2 cups Biscoff biscuits (crushed into fine crumbs)

1/2 cup unsalted butter (melted)

2 cups cream cheese (softened)

1 cup powdered sugar

1 tsp vanilla extract

1/2 cup heavy cream

1/2 cup Biscoff spread (for drizzling)

Optional: Biscoff biscuits for topping

Instructions

Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, mix the crushed Biscoff biscuits with melted butter until well combined. Press the mixture firmly into the bottom of a lined 8x8-inch baking dish to create an even layer. Bake for 10 minutes, then remove and allow to cool slightly.

Make the Cheesecake Filling: In a large mixing bowl, blend the softened cream cheese and powdered sugar together using an electric mixer on medium speed until smooth and creamy. Add in the vanilla extract and continue mixing until incorporated.

Fold in the Heavy Cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until combined, being careful not to deflate the cream.

Layer the Filling: Once the crust is cooled, pour and spread the cheesecake filling evenly over the Biscoff crust. Smooth the top with a spatula for an even finish.

Chill: Cover the baking dish with plastic wrap or aluminum foil, and refrigerate for at least 4 hours, or ideally overnight, to allow the cheesecake to set properly.

Drizzle and Serve: After chilling, remove the cheesecake bars from the dish and cut them into squares. Drizzle the top with warmed Biscoff spread. Optionally, garnish with crushed Biscoff biscuits for an extra touch of decadence.

Enjoy: Serve these cheesecake bars chilled and watch them disappear quickly. Perfect for gatherings, or simply to indulge in yourself!
