2 cups elbow macaroni

4 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

3 cups milk (whole or 2%)

4 tablespoons unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard (optional)

Salt and black pepper, to taste

1 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter (for topping)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Macaroni: Bring a large pot of salted water to a boil. Add in the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

      Prepare the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes until it's slightly golden and bubbly. Gradually pour in the milk while continuously whisking to prevent lumps. Bring the mixture to a simmer.

        Add Seasoning and Cheese: Stir in the garlic powder, onion powder, Dijon mustard, salt, and pepper. Slowly add in 3 cups of cheddar cheese (reserve 1 cup for topping) and the mozzarella cheese, stirring until melted and creamy.

          Combine Pasta and Sauce: Mix the cooked macaroni into the cheese sauce until well coated.

            Prepare for Baking: Pour the macaroni and cheese mixture into a greased 9x13 inch baking dish. Sprinkle the remaining cup of cheddar cheese evenly over the top.
