2 cups cooked chicken, shredded (use rotisserie chicken for a quick option)

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheese (cheddar or Mexican blend works well)

4 large flour tortillas

1/4 cup sliced green onions (for garnish)

1/4 cup cilantro, chopped (optional for garnish)

Cooking spray or 2 tablespoons olive oil

Sour cream or guacamole (for serving)

Instructions
 

Prepare the Chicken: In a medium bowl, combine the shredded chicken with the BBQ sauce. Mix until the chicken is evenly coated.

    Heat Up the Pan: Preheat a large skillet over medium heat and lightly grease it with cooking spray or olive oil.

      Assemble the Quesadilla: Place one tortilla on a flat surface. On half of the tortilla, layer a quarter of the BBQ chicken mixture, followed by a quarter of the shredded cheese. Fold the other half of the tortilla over the filling.

        Cook the Quesadilla: Carefully transfer the folded quesadilla into the preheated skillet. Cook for about 3-4 minutes on one side, or until the bottom is golden brown and the cheese begins to melt. Flip and cook the other side for another 2-3 minutes.
