Easy BBQ Chicken Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups cooked shredded chicken (store-bought or homemade)

1 cup barbecue sauce (your favorite brand or homemade)

1 cup corn kernels (canned or frozen, drained if canned)

1/2 cup black beans (canned, rinsed, and drained)

1 cup shredded cheddar cheese

1/2 cup green onions, sliced (for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional toppings: Greek yogurt or sour cream, jalapeños, cilantro

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly. Pat them dry, then pierce each potato several times with a fork. Place them on a baking sheet lined with parchment paper for easy cleanup.

      Bake the Sweet Potatoes: Bake the sweet potatoes in the preheated oven for 40-45 minutes, or until they are tender and can be easily pierced with a fork.
