Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

3 cups fresh broccoli florets

1 red bell pepper, sliced into strips

3 cloves garlic, minced

1-inch piece ginger, minced or grated

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil (for stir-frying)

1 tablespoon sesame oil

1 teaspoon sugar

Cooked jasmine rice or rice noodles (for serving)

Sesame seeds (for garnish)

Chopped green onions (for garnish)

Instructions

Prep the Beef: In a bowl, combine the sliced flank steak with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and 1 teaspoon of sugar. Mix well until the beef is evenly coated. Let it marinate for about 15-20 minutes while you prepare the vegetables.

Blanch the Broccoli: Bring a pot of water to a boil and add the broccoli florets. Blanch them for about 2 minutes until they are bright green and slightly tender. Drain and immediately plunge them into a bowl of ice water to stop the cooking process. This will keep them crisp.

Prepare the Sauce: In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, and 1 tablespoon of sesame oil. Set this sauce aside.

Stir-Fry the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated beef in a single layer and let it sear for about 2-3 minutes without stirring. This allows it to brown nicely. Then, stir-fry for an additional 2 minutes until the beef is cooked through. Remove the beef from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Add the red bell pepper and stir-fry for another 2 minutes. Then, add the blanched broccoli and any remaining marinade from the beef. Stir everything together.

Combine Everything: Return the beef to the skillet and pour the prepared sauce over the top. Toss everything together until the ingredients are well coated, and cook for an additional 1-2 minutes to heat through.

Serve: Remove from heat and transfer the stir-fry to a serving platter. Garnish with sesame seeds and chopped green onions. Serve hot over cooked jasmine rice or rice noodles.
