Easy Beef and Cheese Enchiladas for Families

Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1/2 tsp paprika

Salt and pepper to taste

8 small flour tortillas

2 cups shredded cheddar cheese (divided)

1 can (10 oz) red enchilada sauce

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.

      Add the diced onion and minced garlic to the skillet and sauté until softened, about 3-4 minutes.

        Stir in the cumin, chili powder, paprika, salt, and pepper. Mix well to combine, then add the black beans and corn, cooking for an additional 2-3 minutes until heated through.

          Spread a thin layer (about 1/2 cup) of the enchilada sauce on the bottom of a 9x13-inch baking dish.

            To assemble the enchiladas, place a generous spoonful of the beef mixture in the center of each tortilla, sprinkle with a bit of shredded cheese, then roll up tightly. Place seam side down in the baking dish.

              Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

                Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbling.

                  Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving. Pair with sour cream if desired.
