Instructions

Prepare the Beef Filling:

    - In a large skillet, heat the olive oil over medium heat.

      - Add the diced onion and sauté for about 3-4 minutes until translucent.

        - Stir in the minced garlic and cook for another 30 seconds until fragrant.

          - Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.

            - Drain excess fat if necessary. Stir in chili powder, cumin, paprika, salt, and pepper.

              - If desired, pour in beef broth for extra flavor and let simmer for 2-3 minutes, allowing the beef to absorb the spices. Remove from heat.

                Make the Creamy Avocado Sauce:

                  - In a blender or food processor, combine the ripe avocado, Greek yogurt (or sour cream), lime juice, minced garlic, and a pinch of salt.

                    - Blend until smooth and creamy. Taste and adjust salt or lime juice if needed.

                      Assemble the Tacos:

                        - Warm the tortillas in a dry skillet or microwave until pliable.

                          - Place a generous spoonful of the beef filling onto each tortilla.

                            - Top with diced tomatoes, shredded lettuce, and cheese.

                              - Drizzle the creamy avocado sauce over the top and garnish with fresh cilantro, if using.

                                Serve:

                                  - Serve the tacos with lime wedges on the side and your favorite salsa for an added kick. Enjoy!
