1 pound large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 lime, juiced

8 small corn tortillas

1 cup shredded red cabbage

½ cup diced avocado

½ cup diced tomatoes

¼ cup chopped fresh cilantro

1/4 cup sour cream or yogurt (for topping)

Salt and pepper to taste

Prepare the Shrimp: In a bowl, combine the peeled shrimp with Cajun seasoning, olive oil, lime juice, salt, and pepper. Toss well to ensure all the shrimp are evenly coated. Allow to marinate for about 15 minutes.
