Ingredients

1 pound potato gnocchi (store-bought or homemade)

2 cups marinara sauce

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups fresh spinach (chopped)

2 cloves garlic (minced)

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions until they float, usually 2-3 minutes. Drain and set aside.

Prepare the Sauce: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the minced garlic until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, about 2 minutes. Stir in the marinara sauce, Italian seasoning, red pepper flakes (if using), and season with salt and pepper. Let the mixture simmer for about 5 minutes.

Mix the Cheeses: In a bowl, combine the ricotta and half of the mozzarella cheese. Mix well and season lightly with salt and pepper.

Combine Gnocchi and Sauce: In a large baking dish, add the cooked gnocchi and pour the sauce mixture over it. Gently stir to combine everything evenly.

Layer the Cheeses: Dollop the ricotta mixture over the gnocchi and sauce. Sprinkle the remaining mozzarella and Parmesan evenly over the top.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving. Enjoy your cheesy baked goodness!
