2 boneless, skinless chicken breasts

1 tablespoon olive oil

3 cups fresh spinach (washed and chopped)

8 ounces fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic (minced)

1 teaspoon Italian seasoning

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper on both sides. Heat olive oil in a large skillet over medium heat. Once hot, add the chicken and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and let it rest for 5 minutes before slicing it into thin strips.

      Sauté the Spinach: In the same skillet, add the chopped spinach and minced garlic. Sauté for about 2-3 minutes, until the spinach wilts and the garlic becomes fragrant.

        Make the Alfredo Sauce: Lower the heat to medium-low. Pour in the heavy cream and stir, allowing it to warm through. If the sauce is too thick, add some of the reserved pasta water until you reach your desired consistency.
