For the Chicken Stew:

1 lb boneless, skinless chicken breasts or thighs, diced

1 medium onion, chopped

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, diced

4 cups chicken broth

1 cup milk

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

For the Dumplings:

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/4 cup unsalted butter, melted

1 cup milk

1 tbsp fresh parsley, chopped (optional)

Instructions
 

Cook the Chicken Stew:

    - In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 3-4 minutes).

      - Add the diced chicken to the pot and cook until browned on all sides, about 5-7 minutes.

        - Stir in the sliced carrots and diced celery, cooking for another 5 minutes until the vegetables are slightly tender.

          - Pour in the chicken broth and milk, and add the dried thyme, rosemary, salt, and pepper. Bring to a gentle boil, then reduce the heat and let it simmer uncovered for about 20 minutes.

            Make the Dumplings:

              - In a mixing bowl, combine the flour, baking powder, and salt. Mix well.

                - In a separate bowl, whisk together the melted butter and milk. Pour the wet ingredients into the dry ingredients and stir until just combined (don’t overmix!). If desired, fold in the fresh parsley for added flavor.

                  Combine:

                    - After the stew has simmered for 20 minutes, drop spoonfuls of the dumpling batter into the bubbling stew. Make sure to leave some space between each dumpling as they will expand.

                      Steam the Dumplings:

                        - Cover the pot with a lid and let the dumplings steam in the stew for an additional 15-20 minutes, until they are fluffy and cooked through. Avoid lifting the lid during this time to ensure the dumplings steam properly.

                          Serve:

                            - Once done, garnish the chicken and dumplings with fresh chopped parsley. Serve hot and enjoy the comforting goodness!
