1 lb (450g) boneless, skinless chicken thighs or breasts, sliced into thin strips

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp sesame oil

1 tbsp vegetable oil

1 bell pepper (any color), sliced

1 cup broccoli florets

1 cup snap peas, trimmed

2 cloves garlic, minced

1 inch fresh ginger, grated

1 carrot, julienned

1 green onion, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken with soy sauce, oyster sauce (if using), and sesame oil. Mix well and let it marinate for at least 15 minutes while you prep the vegetables.
