Ingredients

2 cups cooked chicken, shredded

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup salsa (mild or spicy, to taste)

1 teaspoon cumin

1 teaspoon chili powder

8 flour tortillas (8-inch)

2 cups shredded cheese (cheddar or Monterey Jack)

1 cup sour cream

1 cup chicken broth

1 tablespoon olive oil

Salt and pepper to taste

Chopped fresh cilantro (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Chicken Filling: In a large bowl, combine the shredded chicken, black beans, corn, ½ cup of salsa, cumin, chili powder, and a pinch of salt and pepper. Mix well until all the ingredients are evenly distributed.

Assemble the Tortillas: On a clean surface, lay out a tortilla. Spoon about ⅓ cup of the chicken mixture down the center of the tortilla. Roll the tortilla tightly around the filling and place it seam-side down in a greased 9x13-inch baking dish. Repeat with the remaining tortillas.

Make the Sour Cream Sauce: In a small bowl, whisk together the sour cream, remaining salsa, and chicken broth until smooth. If you want a thinner sauce, you can add a bit more broth.

Pour the Sauce: Once all the tortillas are placed in the baking dish, pour the sour cream sauce evenly over the top of the enchiladas.

Add the Cheese: Sprinkle the shredded cheese generously over the enchiladas, making sure to cover them completely.

Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and slightly golden.

Garnish and Serve: Remove the enchiladas from the oven and let them cool for a few minutes. Garnish with chopped fresh cilantro before serving. Enjoy your cheesy chicken delight!
