1 lb boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow onion, sliced

2 cups cooked rice (white or brown)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: sour cream, shredded cheese, avocado, salsa

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken, olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to coat the chicken evenly. Let it marinate for at least 15 minutes while you prepare the vegetables.
