Ingredients

4 medium zucchinis, sliced lengthwise into 1/4-inch thick planks

3 tablespoons extra-virgin olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh lemon juice

Fresh chopped parsley for garnish (optional)

Instructions

Prepare the Marinade: In a small mixing bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, salt, black pepper, and lemon juice until well combined.

Marinate the Zucchini: Place the sliced zucchini planks in a large bowl. Pour the marinade over the zucchini, tossing to ensure all pieces are evenly coated. Let it marinate for at least 15 minutes at room temperature or up to 1 hour in the refrigerator for extra flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). Ensure the grates are clean and lightly oiled to prevent sticking.

Grill the Zucchini: Once the grill is heated, place the marinated zucchini planks directly on the grill. Grill for about 3-5 minutes on each side until you see grill marks and the zucchini is tender but still has a slight crunch.

Serve: Remove the zucchini from the grill and arrange them on a serving platter. Garnish with freshly chopped parsley if desired, and serve warm.

Enjoy: Pair it with your favorite grilled meats, as a side dish, or toss it into salads for added flavor and nutrition!
