Ingredients

4 ears of fresh corn, husked

1/2 cup unsalted butter, softened

1 tablespoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon lime juice

1/2 teaspoon salt (or to taste)

1/4 teaspoon cayenne pepper (optional for extra heat)

Fresh cilantro or parsley for garnish (optional)

Lime wedges for serving

Instructions

Prepare the Chili Butter: In a medium bowl, combine the softened butter, chili powder, smoked paprika, garlic powder, lime juice, salt, and cayenne pepper (if using). Mix until well combined and creamy. Adjust seasoning to taste.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

Grill the Corn: While the grill is heating up, place the husked corn on the grill grates. Grill for about 10-15 minutes, turning every few minutes until the corn is lightly charred and tender.

Apply the Chili Butter: Once the corn is grilled to perfection, remove it from the grill and immediately slather it with the prepared chili butter while it’s still hot. Use a brush or knife to make sure each ear is generously coated.

Garnish and Serve: Optionally, sprinkle with chopped cilantro or parsley for freshness. Serve with lime wedges on the side for an added zesty touch.
