Ingredients

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, sliced

8 cups low-sodium chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 cups egg noodles

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

Add Carrots and Celery: Stir in the sliced carrots and celery. Cook for an additional 5 minutes until they start to soften.

Pour in Broth: Add the chicken broth to the pot and bring to a gentle boil.

Season the Soup: Add the shredded chicken, dried thyme, dried rosemary, bay leaf, salt, and pepper. Stir well to combine.

Cook Noodles: Once the broth is boiling, add the egg noodles and cook according to package instructions (usually 7-10 minutes).

Final Touches: After the noodles are cooked, taste the soup and adjust seasoning if necessary. Remove the bay leaf before serving.

Serve and Garnish: Ladle the soup into bowls, garnish with fresh parsley, and enjoy your comforting bowl of homemade chicken noodle soup!
