Ingredients

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

2 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

1 cup frozen peas (thawed)

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish, optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour to form a roux, cooking for about 1-2 minutes until bubbly and slightly golden.

Add Milk: Gradually add the whole milk to the roux, whisking continuously to avoid lumps. Cook the mixture for 4-5 minutes, or until it thickens slightly.

Season the Sauce: Stir in the garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure even seasoning.

Incorporate Cheese: Reduce the heat to low and add in the sharp cheddar and mozzarella, stirring until melted and creamy.

Combine Pasta and Sauce: Fold the cooked elbow macaroni and thawed peas into the cheese sauce. Mix until the pasta is well coated.

Optional Topping: If desired, transfer the mac and cheese to a greased baking dish and sprinkle breadcrumbs on top. Broil in the oven for 2-3 minutes until golden and crispy.

Serve: Garnish with chopped parsley if using, serve immediately, and enjoy your delicious homemade mac & cheese with peas!
